TACO SOUP
1 lb ground beef
2 cups cooked black beans
2 cups cooked kidney beans
1 package dry Hidden Valley Ranch mix
1/2 package taco seasoning
2 cans corn, drained
1 can rotel tomatoes
2 can crushed tomatoes tomatoes
Tortilla chips
Optional:
cheese
sour cream
Brown the meat and drain. Throw it all in a big pot, except for the tortilla chips and optional items. Heat about 20 minutes. Add water if it is too thick. Serve in bowls and add tortilla chips and other toppings. I use up my going stale tortilla chips and the crumbs at the bottom of the bag. The sour cream makes it turn a really pukey orange color when mixed in. Tastes good, but if you are affected by sights skip it.
This is the recipe doubled, except for the ground beef, taco seasoning and HV Ranch. I just kept them the same for cost. With the rotel tomatoes if you add all the taco seasoning it is really spicy and hot. With half the package it is more of just a punch than "HURRY AND GET ME MILK!" hot. I try to stretch things by adding beans so that I can feed all the hungry people that are around all the time. This could be frozen really well.
