Menu Plan Monday


This week we are to share a family favorite. The Duggers, the family with 16 kids, even made it on one of their episodes. This feeds 8 so if you are like the Duggars make two or three batches. It is better the 2nd day when all the juices and stuff mix together.

Tater tot casserole
1 1/2 lb ground beef, cooked and drained
16 oz package of frozen french beans*
2 cans cream of celery soup
1 can milk
Bag of round tater tots
8 oz. cheddar cheese
salt and pepper

I put the ground beef in the bottom of a casserole pan, mine is larger than a 8X11- but you could use that size. I then pour out the green beans on top of the ground beef. In a medium mixing bowl I mix the two cans of cream of celery soup with one can of milk. Pour this over the casserole. I then make a layer of tater tots. At first I was compulsive and spent ten minutes arranging them in nice little layers. GET A LIFE! Pour the suckers on and spread them out with the palm of your hand until you have a single layer. Salt and pepper to taste. Bake at 350 for about 30 minutes. Add 8 ounces of shredded cheddar cheese and bake until melted.

*I have used canned green beans before and did not like the texture of a regular green bean. If you do not have the skinny french beans grate them with a grater and it is good.

Monday- BBQ chicken, broccoli, brown rice
Tuesday- Tater tot casserole
Wednesday- Dinner at church(Roast)
Thursday- Chicken stir fry
Friday- chili and brown rice
Saturday- parmesean chicken, salad
Sunday- Homemade pizza ( I will make mine a fajita pizza)
