Taco Soup

Jenn at Frugal Upstate is asking for frugal recipes using ground beef this week. Check out all the other recipes at her site

TACO SOUP

1 lb ground beef
2 cups cooked black beans
2 cups cooked kidney beans
1 package dry Hidden Valley Ranch mix
1/2 package taco seasoning
2 cans corn, drained
1 can rotel tomatoes
2 can crushed tomatoes tomatoes
Tortilla chips

Optional:
cheese
sour cream

Brown the meat and drain. Throw it all in a big pot, except for the tortilla chips and optional items. Heat about 20 minutes. Add water if it is too thick. Serve in bowls and add tortilla chips and other toppings. I use up my going stale tortilla chips and the crumbs at the bottom of the bag. The sour cream makes it turn a really pukey orange color when mixed in. Tastes good, but if you are affected by sights skip it.

This is the recipe doubled, except for the ground beef, taco seasoning and HV Ranch. I just kept them the same for cost. With the rotel tomatoes if you add all the taco seasoning it is really spicy and hot. With half the package it is more of just a punch than "HURRY AND GET ME MILK!" hot. I try to stretch things by adding beans so that I can feed all the hungry people that are around all the time. This could be frozen really well.

You have a great blog here! As to keeping kitchen cabinets open, we have lived in two homes where we did exactly that... just unscrewed the doors and voila! Old Europe. We only do this for dish and glassware (who wants to see all the food ads!) It is dramatically more efficient to do this since you use your service ware every day from shelf to table/stove/oven to dishwasher/drainboard and back to shelf. Cut out the tedious job of looking for the stuff that you are working with two or three times a day... it's really time-saving.
PS Saxon math! Wow, does that bring back memories. Our two sons, now twenty-somethings, were both taught at home and we ALWAYS had the appropriate Saxon text to learn from. And it paid off big time! Thanks for being a homeschool family. It's really nicer for the rest of us (and BTW, Southern and Christian make the frosting on the cake... and I am neither).
