Chicken and rice
This is one of the easiest recipes and is really cheap to make. Boil a whole chicken in a large pot covered with water for about 40 minutes. Remove chicken when cooked through and take all the meat off the bone. I usually remove the breasts whole and save for another dish using white meat. Skim any stuff out of the broth with a slotted spoon. Pour in 2 cups of rice, or one cup or 1 1/3 cup- it doesn't matter! I add a large spoon of butter, but you can omit that too! I add the chicken back to the pot and season with salt and pepper. Let simmer for around 20 minutes to cook the rice. If you need to add more water, add some. You could also add chicken broth, but that would cost more. You could add some veggies, but that would be too healthy.
Soy and lemon chicken
Get your grill going.
Grill chicken pieces till almost done.
While they are cooking, in a small bowl mix together 1/2 cup lemon juice, 1/4 cup soy sauce, a tbsp. minced garlic.
Baste chicken in sauce towards the end of cooking. The soy will burn if done from the beginning.
Greek chicken
Sprinkle greek seasoning- I buy it in the spice aisle. Bake, cook in skillet, grill. I keep this chicken frozen because it goes in anything. Eat it on a salad. Make chicken salad with mayo for sandwiches. Use it in roll ups with ranch dressing and lettuce and tomato, quesadillas, fajitas. Use it it pot pies, pitas, hot pockets.Add to soups. Eat it plain with side dishes. Or, make chicken tetrizinni. Boil spaghetti noodles. Make a white sauce and serve with greek seasoned chicken.

ooo... i am a super fan of sweet and sour food! sigh. i want the Lemon Chicken sooooo badly right now. with rice.
Here I bought a sauce pack so as to skip all the seasonings! and i will try this friday after work.
