A frittata is a great way to use up bits of leftovers that you have. Basically take 6 eggs and whisk them. Then, add whatever you have: potatoes, carrots, spinach, broccoli, ham, chicken, zucchini or yellow squash, sauteed onion, green pepper, mushrooms, tomatoes. Salt and pepper to taste. Top with cheese and cook in a heated and sprayed cast iron skillet in a 400 degree oven. You can also use cooked spaghetti or elbow pasta for a lunch or supper type frittata.

We make this all the time. I use hashbrowns for a crust. We have a container in our fridge set aside for Frittata day. I am so glad other enjoy this wonderful meal. It also looks really nice when serving as a brunch for guests with some fruit or a light salad. ;)
