1 1/2 lb ground beef
1/3 cup chopped onion
2 cups frozen mixed vegetables -cooked with a little water in microwave until tender
salt and pepper to taste
can cream of mushroom soup
1/4 cup sugar
8 medium potatoes- cooked and mashed with milk and butter and sour cream (if desired)
4 oz cheddar cheese
Cook ground beef and onions in a skillet, drain. Put in bottom of 13"X9" baking dish. Add vegetables, soup, salt and pepper, and sugar to meat and mix together. Spoon mashed potatoes on top. Bake at 350 for 20 minutes or until you see the meat mixture is bubbly. Add cheese and bake an additional 10 minutes.
Tips: I used about 1/2 lb leftover meatloaf and mixed it with 1 lb ground beef . I also used 4 frozen twice baked potatoes that I had in the freezer. I made a box of Betty Crocker sour cream and chive mashed potatoes. I heated the frozen potatoes and mashed them with a little milk then added the cooked box of potatoes with them.
